What software do you recommend I use to edit the images?

If you want to work with vector file formats (AI, EPS, WMF, SVG or PDF formats) then you will need professional image editing software like Adobe Illustrator or Corel Draw. Adobe PhotoShop can open EPS files at the size you specify so that you can edit them further. There is also a free program called GIMP that may meet your needs. If you do a search for imaging editing software on Google, you will find there are many other options too.
